Happy New Year to all!  With good soil moisture from fall rains, we are looking forward to the beginning of a great year at the ranch.  We start the year with three healthy heifers on the ground;  Isabella, Maya and Aphrodite.  As I type, I suspect our next cow is preparing to have her calf on the coldest night of the year--cows seem really good at calving in bad weather.  

Meanwhile, we're gearing up for January deliveries.  January (and all odd-numbered months) are the primary months for our CSAs, so our beef availability is a little more limited than it is in even-numbered months.  However, we still have a reasonable selection in stock.  Mid-month, once the deadline for CSA orders has passed, I will re-update the inventory.  So, if what you want is not available at present, check back in a couple weeks.

Don't forget, you can order halves, quarters and eighths in even-numbered months, saving up to 25% over retail prices.  

Boneless Ribeye Steaks on sale!  For a limited time, and while supplies last, we Boneless Ribeyes are on sale for $15.99 (save $4.00/lb).  They can be ordered at the sale price through the steaks and grill cuts order page.  Sale steaks must be delivered by the Feb 2 delivery date.

The holiday season is here!  I'm one of those people who look more forward to preparing for Christmas than to the day itself.  I'm enjoying playing Christmas carols at full volume (and singing along) out in the beef shed when I'm sorting and packing beef.  (and my husband is quite happy he doesn't have to be there to listen!).  

Our calving season has started.  We name all our calves, with the maternal lineage determining the name theme; usually something to do with music.  This year, our calving season began with the birth of Isabella (after the carol "Bring a Torch Jeannette, Isabella).  She is the daughter of Drahomira (after King Wenceslas' mother) and the granddaughter of Joy (twin to Comfort, born on Dec 21 of that year).  

Although we no longer have a large enough flock to sell eggs, we still produce our own.  Eggnog made with Dyer's raw milk and farm-fresh eggs is one of my favorite holiday traditions.  Here's a link to the recipe:  Cooked Eggnog.   Be sure to use fresh-grated nutmeg and high quality vanilla to do it justice.  

Brazos market date changed for December: Cameron Yoe are still in the football playoff hunt, and looking likely to go all the way to state!  To accomodate, we have changed our December date for the Brazos market to December 7.  The chief beef-packer will be out of town Mon-Thursday of next week, so orders placed after 3:00 pm today may not be invoiced, but WILL be ready for next Saturday's pickup.  

Holiday roasts: We have a limited number of very high-quality roasts for the holidays.  If you're looking for a special dinner idea, try a tenderloin roast with blue cheese sauce, or the slightly bigger strip-loin roast (New York strips in a roast form).

Liver back in stock:  We did not receive our organ meat from the processor in November, but we do have liver, oxtail and 1 package of sweetbreads in stock from our December harvest, available through the Value and Specialty Cuts online store page.  Sorry, but heart and tongue have already been spoken for.

It's time to place orders for  December CSA packs.  You may order your CSAs for December through the CSA member-only page of the online store.  Please place orders for November no later than Dec 6.

Remember that you now can order for either odd or even month delivery on the order page.  Odd-numbered months are still the primary months for CSA ordering, as we set aside two entire beeves for CSAs in odd months.  As inventory allows, there will be CSA packs available in even-numbered months as well. That inventory will be limited initially, and will be updated again after the deadline for non-CSA Half, quarter and eighths for even-numbered months has passed.  You may now also order CSA packs in both months, or order the bi-monthly share even if you are an eighth beef CSA customer.

CSA prices are set for the calendar year.  During 2013, we raised the prices on our half, quarter and eighth beef.  For 2014, we will be adjusting the CSA prices to reflect roughly the same price per pound as if you were buying a half beef.  Eighth beef CSA for 2014 will be $7.66/lb and the bi-monthly CSA packs will be $155.

Cooler weather and RAIN brings changes here at Wild Type Ranch.  We are phasing out some of the summer cuts (k-bobs, tx style boneless ribs) and will be featuring stew beef, chili beef and roasts.  We also slow down our harvest schedule and cut back to one Brazos market per month during the colder months.  

At the ranch, we're happy to have had to shred (mow) some of our pastures to make room for the cool season grasses to come in.  The cattle have more grass than they can eat and are looking fat and furry.  I'm already anticipating the beginning of calving season in January.  Follow us on Facebook to see pictures as calving season starts.

The inventory for November has been updated in our online store, and the market/delivery schedule is set (see below, or our Calendar page).  Deliveries for November begin November 9th with our monthly visit to the Brazos Valley Farmer's Market.  This will be the only time we will be at that market in November.

Variety Pack Sale:  Variety Packs are on sale for a limited time at a special price of $124.  A savings of $20 per pack.  This is a great way to sample our steaks, roasts and other cuts.  

Winter Harvest Schedule:  With the advent of cooler weather, our harvest schedule has decreased, meaning our inventory will be more limited than during the summer months.  This is especially true in the odd-numbered months, when most of the beef is earmarked for our CSA customers.  In order to ensure you get the cuts you desire, placing an order is highly recommended.  Even better, assure your supply by reserving a eighth, quarter or half for delivery in December, February or April.   

Halves, quarters and eighths: We have eighths, quarters and half-beefs available in even numbered months. You can reserve bulk beef through the end of 2014 via the online store.  Ordering a half, quarter or eighth is a good method for saving money on beef.  Eighths are $8.50/lb of packaged beef and quarters are $8.25   Halves are $4.75/lb of hanging weight (about $7.50/lb packaged wt). A $200 deposit holds your spot until your beef is harvested.   You may pay your deposit via Paypal, as well as by mail or through a bank draft link on our invoices.  Orders for December eighths and quarters are due by November 24. Beef Halves for December must be ordered by NOVEMBER 13.

As our supply gradually increases, (and the rains come), we will be slowly expanding our CSA program.  We have a few openings in the bi-monthly CSA, available on a first-come basis  (enrollment fee must be received to reserve space).  

CSA members receive 18-20 pounds of beef (approximately 1/16 to 1/20th of a beef) in each pack.  The cuts vary from month-to-month, but generally include a roast or brisket, 3-5 steaks 6-10 pounds of ground beef, patties or chili and a variety of other cuts such as cutlets, round steak, soup bones or skirt steak.  The enrollment fee is $150, which will be kept on deposit until the member leaves the program.  The price is set to equal the per-pound price for purchasing a half beef.  Pricing is $150 for 2013, and will increase to $162 for 2014.  For more information, download our information and FAQ PDF or see our website: http://wildtyperanch.com/subscriptions.  You can enroll and pay online via the online store.

September deliveries: The September schedule starts this Thursday with deliveries to Temple, then we'll be at the Brazos Farmer's Market Saturday, and the Brick Oven (arboretum area of Austin) on Monday. Our freezers fully stocked with all our cuts, including K-Bobs.  We have all of our sampler packs available in inventory too!  Orders are required for all delivery points, except the Brazos Market (you are welcome to spot purchase or place an order there).  Please place orders by 5 pm the night prior to the delivery.

Special Feature--Sirloin K-bobs:  While they last, we've got sirloin K-bobs!  Juicy pre-cut squares of sirloin steak cut from some of our most tender beef, in 1 lb packages.  They are available to order through the steak and grill cuts section of the online store.

Summer Sausage is back in stock:  Our next batch of summer sausage is scheduled to be back from the smokehouse!  It is available through the value and specialty cut order page on our web site. We'll have plenty available for sale at the Brazos market and in stock at Dyer Dairy.

NOTE NEW TIME AND WEEKDAY FOR CROSSFIT and DYER DELIVERIES!  We will now be making deliveries to Crossfit Cedar Park one Tuesday per month from 11-11:30 and to Dyer Mercantile a different Tuesday per month from 11-11:30.  

Quarters and eighths: We have eighths, quarters and half-beefs available even numbered months. You can reserve bulk beef through the end of 2013 via the online store.  Ordering a half, quarter or eighth is a good method for saving money on beef.  Eighths are $8.50/lb of packaged beef and quarters are $8.25   Halves are $4.75/lb of hanging weight (about $7.50/lb packaged wt). A $200 deposit holds your spot until your beef is harvested.   You may pay your deposit via Paypal, as well as by mail or through a bank draft link on our invoices.  ORDERS FOR OCTOBER EIGHTHS AND QUARTERS ARE DUE BY SEPTEMBER 23.  Beef Halves for October must be ordered by SEPTEMBER 15.

Beef sale and pickup points are the Brazos Farmer’s Market (Bryan), Crossfit Cedar Park/Tillman Physical Therapy, Arboretum Brick Oven (Austin), Live Oak UU Church (Cedar Park) and Dyer Mercantile (Georgetown), and Temple . Times and days are on the website calendar and listed below.
