BRAZOS MARKET STEAK SALE SATURDAY:  We will be at the Brazos market tomorrow, Oct 19.  In addition to the incredible NY Strip sale, ALL of our great steaks will be on sale for $2.00/lb less than their usual price!

Last Call for Seasonal K-bobs and Boneless Ribs:   K-Bobs, and Texas-style boneless ribs (a great lean alternative to short ribs) are here until they're gone.  We will not carry these items again until next May or June.

In stock now:  We have a stock of some items we often don't carry:  Oxtailbeef fat/tallow (~8 lb bag), T-bone steaks and don't forget our summer sausage (no MSG, no nitrates, all beef, vegetable cure)

Quarters and eighths: We have eighths, quarters and half-beefs available even numbered months. You can reserve bulk beef through the end of 2013 via the online store.  Ordering a half, quarter or eighth is a good method for saving money on beef.  Eighths are $8.50/lb of packaged beef and quarters are $8.25   Halves are $4.75/lb of hanging weight (about $7.50/lb packaged wt). A $200 deposit holds your spot until your beef is harvested.   You may pay your deposit via Paypal, as well as by mail or through a bank draft link on our invoices.  Orders for December eighths and quarters are due by November 24. Beef Halves for December must be ordered by NOVEMBER 13.

October deliveries: The October schedule is underway, with our next delivery this Thursday to Temple.  PLEASE NOTE: The delivery day for the Brick Over/Arboretum is Oct 21, NOT Oct 14th, as was originally scheduled. Our freezers fully stocked, ready for good fall cooking.  We have all of our sampler packs available in inventory too!  Orders are required for all delivery points, except the Brazos Market (you are welcome to spot purchase or place an order there).  Please place orders by 5 pm the night prior to the delivery.

As our supply gradually increases, (and the rains come), we will be slowly expanding our CSA program.  We have a few openings in the bi-monthly CSA, available on a first-come basis  (enrollment fee must be received to reserve space).  

CSA members receive 18-20 pounds of beef (approximately 1/16 to 1/20th of a beef) in each pack.  The cuts vary from month-to-month, but generally include a roast or brisket, 3-5 steaks 6-10 pounds of ground beef, patties or chili and a variety of other cuts such as cutlets, round steak, soup bones or skirt steak.  The enrollment fee is $150, which will be kept on deposit until the member leaves the program.  The price is set to equal the per-pound price for purchasing a half beef.  Pricing is $150 for 2013, and will increase to $162 for 2014.  For more information, download our information and FAQ PDF or see our website: http://wildtyperanch.com/subscriptions.  You can enroll and pay online via the online store.

Time to place your order for CSA packs for September (or October).  The online inventory has been updated with available packs and organ meat. The deadline for ordering is September 1.  

Please go to our website and order from the CSA member-only page of our online store. You may pay at order via Paypal, at pay at pickup by cash or check or via a link on the invoice you will be sent prior to your delivery date.

CSA pickup points are the Brazos Farmer’s Market (Bryan), Crossfit Cedar Park/Tillman Physical Therapy, Arboretum Brick Oven (Austin), Live Oak UU Church (Cedar Park) and Dyer Mercantile (Georgetown), and Temple . Times and days are on the website calendar and listed below. 

2 Extra packs available this Saturday at Brazos Market:  We will have 2 extra bi-monthly packs available at this Saturday's Brazos market.  Please specify that you want delivery this Saturday when you order.

Remember that all CSAs are opt-in, using the online order page (meaning if you don't order online, you will not be scheduled for a pack). The inventory on the order page has been updated the bi-monthly CSA packs and eighth-CSA packs, plus the organ meats I believe I will have available for CSA members. Please go to the page and place your order, specifying your pickup site and date.  If you do not specify which month, I will presume you want a September pickup. If you need to make special arrangements, you can make a comment in the comment box.

We have some extra CSAs available, so if you missed the order deadline, or want an extra, you can order one for August delivery.  All invoices for CSA orders have been sent out.  If you ordered a CSA and did not receive an invoice, please let me know ASAP (maybe after checking your junk mail filter).

The online store has the inventory updated to reflect the extra CSAs available.  Please go to our website and order from the CSA member-only page of our online store. You may pay at order via Paypal, at pickup by cash or check or via a link on the invoice you will be sent prior to your delivery date.

Please also note a change in the Brazos market schedule for August:  We will be making 2 Saturdays in August, so are now going to be at the  market Aug 3 and Aug 24, not Aug 17 as originally scheduled.

Be sure to come out to the farmer's market tomorrow!  It is the annual "Market-to-Menu" event, with a local chef preparing delicious food for sampling using our own beef cutlets and produce for the market.  Be sure to visit the Go Texan booth for recipes, shopping bags and gardening information.
