For the first time in nearly 2 years, we are opening our CSA/beef subscription program for new members!  We currently have 5 spots available in our bi-monthly CSA.  CSA members receive 18-20 pounds of beef (approximately 1/16 to 1/20th of a beef) each even numbered month.  The cuts vary from month-to-month, but generally include a roast or brisket, 3-5 steaks 6-10 pounds of ground beef, patties or chili and a variety of other cuts such as cutlets, round steak, soup bones or skirt steak.  The enrollment fee is $150, which will be kept on deposit until the member leaves the program.  Each pack is $150 for 2013.  For more information, see our website: http://wildtyperanch.com/subscriptions.  You can enroll and pay online via the online store.

May Inventory has been updated:  After Saturday's Brazos market, we are sold out of nearly everything.  However, we will be restocked for deliveries beginning May 2.  We have updated our anticipated inventory online.  Once we get the CSAs and existing orders packed, we will update again. Please place your order via the online store.  Pre-ordering is strongly suggested, to get the best cuts.  

Temple area deliveries now available: For our Temple customers, we now offer deliveries on most Thursdays at 902 S. Main at 11:45.  

Bulk Beef: We have eighths, quarters and half-beefs available even numbered months.  You can now reserve bulk beef through the end of 2013 via the online store.  Ordering a half, quarter or eighth is a good method for saving money on beef.  Eighths are $8.50/lb of packaged beef and quarters are $8.25   Halves are $4.75/lb of hanging weight (about $7.50/lb packaged wt). A $200 deposit holds your spot until your beef is harvested.   You may pay your deposit via Paypal, as well as by mail or through a bank draft link on our invoices. 

Time change for Tillman PT delivery:  Deliveries to Tillman PT will now be from 3:15-3:45 on designated Thursdays.

Spring is a busy season at the ranch: We're nearly done calving, beginning our breeding season (selecting only the most eligible bulls to breed to our beloved girls) and checking growth and condition on our beef herd.  I think I've personally touched each animal on the ranch at least once in the last month!

Spring is also when we have all of our cattle ultrasounded.  We have a professional technician come out to scan each young animal that weighs over 500 pounds.  We get a visual image of how the ribeye will look and scientific measurement of the ribeye size, marbling (= Prime, Choice or Select grade) and how much backfat the animal is carrying.  We also tenderness test at this time.  Using this information, plus knowledge of disposition and pedigree, we select the heifers we will retain to join the breeding herd.  For the beef herd, the ultrasound information helps us predict the quality of the beef and how to have each beef cut for maximum customer satisfaction.  This is one of our primary ways we guarantee that our beef is the best of the best.

For the first time in several years, we have plenty of grass at the moment and everyone is glossy fat and happy.  The cattle have been gaining 2-3 pounds per day off the luscious and diverse grazing available.  Consequently, we will be to harvest an extra beef each month from now through July.  That should help with our perpetual shortages, and keep our wholesale partners at Village Foods and Dyer Mercantile happy!

April Inventory:  Much of our April beef was pre-ordered as bulk beef, but we do have some inventory available.  We have plenty of ground beef, summer sausage and hamburger patties, plus a limited amount of the following: Chili, stew, stir fry, chuck roast, rump roast, brisket, skirt steak, tenderloin, NY strip, boneless ribeye and bone-in ribeye steaks, plus one variety pack.  If you would like beef at one of our remaining April market/delivery points, please place your order via the online store.

Pack Apologies:  Our apologies to anyone who tried to order a variety pack, value pack, grill pack or steak sampler after the last e-mail and found they were still not available through the pack page of the online store.  That has been corrected, and you may now order.  We will be filling pack orders through March 13th for the upcoming month's deliveries.  Orders placed after that will be filled after April 9.

Order now for best availalability:  If you want beef in the upcoming month, we recommend placing your order before the March 16th Brazos market.  After that, our inventory will likely be significantly depleted.  You can place your order now for any of the March markets or delivery points.  We were able to harvest an extra beef this month, thanks to the green grass and rain, so are well stocked.  We have packs available, as well as individual cuts, and our wonderful summer sausage.

We'll be making our monthly appearance at the Brazos Farmer's Market this coming Saturday, Feb 16.  We have plenty of ground beef, hamburger patties, chili beef and our latest batch of summer sausage!  You can purchase onsite at the market or you can place an order online here.

Ground Beef is stocked up: If you've been wanting to order our 10-packs, but haven't been able to for a while, now is your chance! The ground beef we have in stock will have 2-3 Tbsp of drainable fat per pound when cooked; a little higher fat than our typicial.

We're all set for the 2013 beef market season, and have made a few changes. Pickup point this year will be the Brazos Farmer's Market (Bryan), Crossfit Cedar Park (Cedar Park), Arboretum Brick Oven (Austin) Live Oak UU Church (Cedar Park) and Dyer Marcantile (Georgetown).  We will not be selling at the Georgetown Farmer's Markets in 2013.  Please note also that the pickup time for Tillman will now be 2:30-3:00 and for the Arboretum will be 11:15-11:30.

Ground Beef is stocked up:  We have plenty of ground beef again!  If you've been wanting to order our 10-packs, but haven't been able to for a while, now is your chance! Because our beef is almost always lean, we have eliminated "extra lean" ground beef.  Should we ever get beef that exceeds our fat criteria, we will list it as such ("high fat") on our order page.

One of our quality control measures is to taste-test a steak from every animal we sell. It's a tough job, but my husband and sons are willing to make the sacrifice :-)  We evaluate flavor, juiciness and tenderness. Typically, we have a 2-3 beeves per year that meet our top-shelf standards and get marketed as "Captain's Cut".  The drought has been hard on the marbling (intramuscular fat that adds juiciness and flavor) in our beef, and we've not been able to market any beef under that brand.

This past week, however, we taste-tested our best steaks of the year.  These steaks are well into the prime-level of marbling and were extremely tender.  We are selling them individually for the first time, just in time for those special meals at the holidays.  There is a limited inventory available through our online store.  You can place an order now for pickup any time before year-end.  
 
We also cook, drain and measure the fat on our ground beef each harvest.  The opposite side of prime beef is fatter ground beef.  The ground beef we have available for sale at the moment has a higher level of fat than our typical 80-90% lean.  We estimate it to be closer to 70% lean.  To make sure our customers know what they are purchasing, this ground beef is listed under "High Fat Ground Beef" in our online store
 
We have several delivery points coming up, including the Arboretum next Monday Nov 12.  Orders for Monday need to be in by 5 pm Sunday.  Note: if you are ordering for December, check back after Nov 30, when quantities will be reset following our next beef pickup.

  • Village Foods 1760 Briarcrest Drive, Bryan, carries our beef in a special freezer for “Natural Beef”, across from the fresh meat case.  Village Foods has been great about working with us and other local suppliers. We will stock as available, but supplies will be short until mid-late August
  • Dyer Mercantile (7801 E. Hwy. 29, Georgetown) carries our beef in the “Wild Type Ranch” freezer.  Regular hours are weekdays (except Wednesday) 10-7 pm , Saturdays 9 am-7 pm and Sundays 1 pm -6 pm.

We've got a well-stocked freezer going into tomorrow's Brazos market and the Austin-Arboretum delivery on Monday. Stock up on beef while you can!  You can order online through our website to reserve your beef, or buy on the spot at Saturday's market.  Arboretum deliveries are by order only.  Visit our online order page to place your order.  The inventory has been updated, so you'll see what we have in stock as of today.  
 
Orders for Saturday's market need to be in by 5 pm this evening.  Orders for Monday need to be in by 5 pm Sunday.  Note: if you are ordering for November or December, check back after Oct 25, when quantities will be reset following our next beef pickup.

Special items in stock this month:  Sirloin K-bobs, Ribeye cutlets, TX-style boneless ribs, Chili beef, beef fat

Thanks to everyone for all the well-wishes and concern for Ralph.  Latest x-rays confirm his broken vertebrate is healing as expected, but recovery will take a while.  We remain grateful that he wasn't hurt worse!

I think there's a reason why it's difficult for ranchers to get health insurance: It's a job filled with unavoidable work hazards.  We learned that the hard way this week.  Ralph was in an ATV accident while rounding up cows, flipping the ATV and ending up with two broken ribs and a broken vertebra.  He has been in the hospital most of this week, but we hope he will be home by Monday.  We are fortunate that there is no paralysis, just a long recovery period.

Consequently, we have rescheduled and limited our delivery and markets for September, as I will be doing double duty here for a while!  The new schedule is below for September and October,  Our apologies for any inconvenience this may cause.  PLEASE NOTE the Sep 22 Brazos market is at a one-time-only location, as the Health Department parking lot where we usually have the market is being resurfaced.
 
 
Changes to Pack Ordering: Due to our decreased volume this year, we find we are having difficulty filling packs with the specified cuts.  Consequently we will now be filling packs at the beginning of the month's beef cycle only. Pack orders placed before the 10th of the month will be filled for the current month's deliveries.  Pack orders placed after the 10th of the month will be filled for the following month's delivery.

Just a reminder that we took a break from harvesting beef in July, so there will be no beef deliveries in July.  We will be selling beef in August as usual.  The tentative August schedule is at the end of the e-mail.  We will also resume stocking Village Foods freezers by mid-August.

I have made a guestimate of what beef will be available in August over and above the standing CSA orders and updated the inventory in our online store.  Any orders received this month will be packed for August delivery.

I do have some eggs available.  I will be at the Brick Oven on Monday, July 9 and can deliver eggs.  We are out of stock on summer sausage until August.
