Our New Year has started with some much needed rain. It is good to see the tanks with water in them, and the green beginning to brighten the landscape!

As you may already know, we have downsized the herd due to the drought.  We will be selling approximately half the amount of beef in 2012 as we did in 2011.  Our CSA customers are first in line for each month's harvest.  After we pack the CSAs for the month, we fill orders in the order in which they are received.  The remaining beef will be available for sale at the farmer's markets.  We are also scheduling requests half and quarter beef.  

We're just starting our January delivery schedule, which is below.  If you miss our delivery dates, you can get our beef, along with plenty of other local products and the best raw milk in Texas at Dyer Mercantile (7801 E. Hwy. 29, Georgetown) or at  Village Foods in Bryan.
 
LEAN BEEF SPECIAL:  Did you make a resolution to eat better in 2012?  We can help.  Two of our most versatile, easy-to-prepare and leanest cuts are 25% off all month.  Some of my favorite recipes for these cuts include Yogurt Marinated Steaks and Beef and Spinach Lo Mein.  

WINTER DELIVERIES:  The Georgetown/Round Rock markets have closed for the season, but we will continue to make monthly deliveries to our market spots.  We will be at each spot for a short time once per month to allow our CSA customers and anyone who places an order to pickup beef.  Can't have y'all going to the supermarket for beef!  The schedule for January and February is below.

We're winding down our beef year with the last few deliveries and one last farmer's market.  There's still time to order for any of the remaining pickup points, and plenty of time to order gift certificates to be mailed to you or your recipient.  If you miss our delivery dates, you can get our beef, along with plenty of other local products and the best raw milk in Texas at Dyer Mercantile (7801 E. Hwy. 29, Georgetown).

CEDAR PARK AND GEORGETOWN DELIVERY DAY TOMORROW: Thursday is our monthly delivery day to Cedar Park (Crossfit/Tillman PT) and our winter delivery to the Georgetown Farmer's Market location.  If you want an order, please submit it by 9 am tomorrow (Thursday).  We will have our regular freezer trailer with us for spot purchases in either location.

AUSTIN ARBORETUM DELIVERIES MONDAY: We will be making deliveries in North Austin on Monday, to the Riata area (Riata Bar and Grill) and to the Arboretum Area (Jolleyville Brick Oven/HEB) on Monday.  Please have orders in by Sunday at 5 pm.

SUN CITY MARKET NEXT TUESDAY-we'll have tie-dye!  
We will be at the Market next Tuesday, We will also have our tie-dyes available.  You can sneak a peek on our Facebook album.  The Sun City market is open through December.  This week's market was a great success for vendors and customers, despite the cold and wet weather.

GIFT CERTIFICATES AVAILABLE:
We have added a gift certificate section to our online store.  We are also now accepting Paypal for gift certificate orders.  We have certificates available for any of our packs, for a trial CSA enrollment (3 monthly or bi-monthly packs) and in various dollar amounts.  If you pay by Paypal, we will mail the gift certificate directly to the recipient in time for Christmas.

HOLIDAY ROASTS:  Although it is too late to special order roasts for Christmas, we do have a few Tenderloin and Strip Loin Roasts in stock and available for order or purchase.

The holiday season is fully upon us!  Are you ready?  As a small business owner and resident of a small Texas town, I would like to encourage everyone to do as much local shopping as possible this year.  Our own town of Cameron has created a Shop Cameron  website to highlight our local businesses.  You can visit our ranch listing for downloadable coupons each month.

Charles Darwin claimed that those most fit win to the struggle for survival were those best able to adapt to their environment.  We've certainly had our share of lessons in adapting in the six years we've had the ranch, but none moreso than this year.  

We've weathered this year's drought, so far, but are having to adapt to stay in business.  We have worked to be sustainable so as to produce what our cattle eat.  With no rain, though, we've had to adapt by buying in hay from Colorado, Kansas and South Dakota.  We're even piping water to the pastures from the municipal supply.  Hay is costing twice (or more) what it usually does.  Normally, we can graze 2/3 of the year without feeding hay.  We've now been feeding hay for 18 months with only occasional breaks for grazing.  

Last Friday, we bid goodbye to most of our mature cows.   They are headed to another grass-based producer in Arkansas. At least our investment in great beef genetics will continue to provide dividends to consumer and producer alike.  We have kept a handful of our best mamas, all of our cattle scheduled for harvest for the coming year and our young heifers.  We've stockpiled enough hay to get through the next year with our reduced herd.  

Economically, we've had to adjust by raising our prices.  Although we love what we do, both of us work full time at producing and marketing our beef, knowing that every pound we sell currently costs us more than its selling price.  We have calculated and estimated and projected, and have come up with a price list that shares the risk of surviving through the coming drought/recovery years.  We're satisfied with covering our costs while we see how things develop, and that's pretty much where we set our prices.  When the rains come, we hope to be in place with a once-again-viable business.

The new prices will go into effect with the November markets.  We will honor the old prices for any orders placed with us at least 24 hours before any November market.  In addition, the CSA, half, quarter and eighth prices have increased by less than the cut prices.  The decreased labor in selling in bulk is being passed on to our customers.  This is a great time to consider filling your freezer or joining one of the CSAs.

Thanks goes out to all of our customers who have shown their concern for our wellfare and encouraged us over the past year.  If we didn't deal with such wonderful people in our daily life, we wouldn't be making such efforts to continue.
 

FOOD DRIVE:  Bring a can, get $1.00 off.  We will be collecting canned and boxed food for Milam County, in conjunction with the Milam County Lions Clubs and Eric and Alex's scout troops.  For every canned good or boxed item, we will give you $1.00 off one beef item this week at the Georgetown Farmer's Market.  

HOLIDAY ROASTS:  If you'd like a change from turkey this year, try a premium beef roast.  Here's the run-down on our best roasts:  We have a few Tenderloin and Strip Loin Roasts in stock and available for order or purchase at the upcoming markets.
  • Tenderloin Roast:  This is the most tender roast possible.  Typically cut into filet mignon steaks, this smaller roast is easy to cook, and goes great with a number of sauces.  We carry this roast in stock in 1.5-2 lb sizes.  Special orders can be placed for sizes up to 4-5 lbs.  
  • Strip Loin Roast:  This boneless roast comes from the same cut as the New York strip steak.  Strip loins are an excellent carving roast, and come in sizes from 2-9 lbs.  We will carry a few of these in stock, but special orders are recommended. 
  • Standing Rib Roast:  This is the queen of holiday beef roasts.  This bone-in roast is often called "Prime Rib Roast", and is usually served rare to medium.  Leftovers of rare or med-rare roast can be sliced and quick-grilled for a fantastic steak.  Standing rib roasts range from 3-18 lbs and are special order only.
Sun City and Round Rock special orders can be place through November 8 for delivery in November.  Special orders for December need to be placed by November 23rd.

LAST MARKETS OF THE SEASON:  The Round Rock, Georgetown and Sun City market season runs through November, so the upcoming dates for those markets will be the last for the season.  We will continue to make deliveries to the Round Rock and Georgetown sites once per month through the winter.  The winter schedule will be finalized and posted on the website calendar soon.
 
GIFT CERTIFICATES AVAILABLE:  Why not give someone the gift of great beef this holiday?  We have gift certificates available in any amount or for specific packs/items etc.  We are offering a special "Trial Subscription" gift certificate this year, which is 3-months prepaid monthly or bi-monthly CSA, with no deposit.

This weekend is something special at the Brazos Valley Farmer's Market.  It is the annual Demo Days, where vendors give demos on some of their skills, such as soap-making and blacksmithing.  In addition, we will be doing  Reverse Trick-or-Treating and handing out samples of Fair Trade Chocolate and information about unfair child labor practices in many cocoa producing countries.  Stop by the booth for a sample!

Fall harvest season is a good time to think about sharing with those whose harvest may not be as bountiful.  My boys' scout troops are participating in a food drive, and we'll be collecting canned and dry goods (see below for a special offer).

Wow!  I can't believe it's already time to start thinking about the end-of-year holidays!  Thanksgiving is not that far away, and the calendar is beginning to look full of activities as we rush toward the end of the year.  I've already received some orders for Thanksgiving roasts!

If you'd like a change from turkey this year, try a premium beef roast.  Here's the run-down on our best roasts:
  • Tenderloin Roast:  This is the most tender roast possible.  Typically cut into filet mignon steaks, this smaller roast is easy to cook, and goes great with a number of sauces.  We carry this roast in stock in 1.5-2 lb sizes.  Special orders can be placed for sizes up to 4-5 lbs.  $21.00/lb
  • Strip Loin Roast:  This boneless roast comes from the same cut as the New York strip steak.  Strip loins are an excellent carving roast, and come in sizes from 2-9 lbs.  We will carry a few of these in stock, but special orders are recommended.  $14.25/lb
  • Standing Rib Roast:  This is the queen of holiday beef roasts.  This bone-in roast is often called "Prime Rib Roast", and is usually served rare to medium.  Leftovers of rare or med-rare roast can be sliced and quick-grilled for a fantastic steak.  Standing rib roasts range from 3-18 lbs and are special order only. $14.99/lb
Deadline for special orders is October 25 for Tillman, Georgetown, Brazos, Arboretum and Live Oak November delivery.  Sun City and Round Rock special orders can be place through November 8 for delivery in November.

Round Rock Market this Saturday:  We'll be at the Round Rock Market (in the Scott and White parking lot) from 8-noon on Saturday, October 15.  Follow us out on Facebook for the latest specials and updates.  We will bring our tie-dye, too!

Live Oak UU Church deliveries Sunday:  This Sunday is our monthly pilgrimage to our favorite church.  After church (~12:15), we'll be available for deliveries (and have a little extra for sale).  I will have our tie-dye there as well.  Please have orders in by 6 pm Saturday.

Fair Trade Chocolate:  This year, we are doing something special for Halloween.  At the October 29 Brazos Valley Farmer's Market, my boys and I will be handing out samples of Fair Trade Chocolate and information about unfair child labor practices in many cocoa producing countries.  If your family would like to participate by

It's been a while since I let my artistic hippie side out, but we finally did a batch of tie-dye at the ranch last weekend.  So, this weekend at the Brazos market, we'll have some cool tie-dye shirts and a few other items for sale along with our beef.

Saturday marks the beginning of a busy two weeks for us, beef-wise.  We've got markets and delivery days heavy between now and Oct 22.  Good thing our freezers are full to bursting!

One of the promises we make to our customers is that we taste-test beef from every animal we harvest.  Between our genetics and our management, it's rare that we every have anything that doesn't 'meat' our standards.  However, we do make good on our promise.  For the first time in almost three years, we had steaks that were not quite as tender as we would like.  We have pulled all those steaks out of our inventory (and are forcing them on our close friends and neighbors).  Where else can you get that kind of guarantee on your food?

Brazos Market Saturday:  We'll be at the Brazos Valley Farmer's Market Saturday with beef and tie-dye.  If you miss us this week, we'll be back on October 29!

Arboretum Deliveries Monday:  Monday is our monthly Riata and Arboretum delivery day.  These delivery spots are by pre-order only.  Please have your orders in by 7 pm Sunday for inclusion in Monday's deliveries.  

Cedar Park Deliveries and Georgetown Market next Thursday:  We'll be making monthly deliveries to Crossfit Cedar Park (Tillman PT) on Thursday from 12:45-1:15, then heading over to the Georgetown Farmer's market.  Orders are preferred for Crossfit, but we can do spot sales there, too, if you forget to order.

Round Rock Market next Saturday:  We'll be at the Round Rock Market (in the Scott and White parking lot) from 8-noon on the following Saturday, October 15.  Follow us out on Facebook for the latest specials and updates.  We might even bring tie-dye, if there is any left after the Brazos market!

Summer Sausage on Special:  Th last batch of summer sausage was made from the same lean ground beef we had on special. That's great news for the waistline, but the extra fat has a role to play in the texture of the product.  This batch is lean and as tasty as ever, but has a slightly more crumbly texture.  Consequently, we will be selling the current batch of summer sausage for $7.50/stick, a savings of $2.50!  This is a healthy alternative for school lunches, as well as a great snack!   

Menu Change at Stover's Cafe:  Stover's has a new, easier to use menu.  Note, however, that we are no longer the Village Burger.  WT Ranch beef is featured as an option, but you must ask for us!

We got a magical 1.5 inches of rain at the ranch last weekend!  It's the first significant rain we've had since June.  Aside from a very short period this spring, most of our property has not had appreciable grass growth since about this time last fall, so we have been feeding hay nearly every day for a year or more.  

Part of our commitment to environmental stewardship is building the health of the soil, which translates to the health of the animals, the health of the beef they produce and our own health.  Sometimes, we have to make tough decisions between what's best in the long term and the economics of the short term.  As hay has become scarce and prices have tripled or quadrupled, it has been tempting to graze every last bit of growth.  The difference between leaving a grass cover of 4-6 inches and grazing to bare ground can mean a 20+ degree difference in soil temperature.  With the summer we've had, that can translate to killing the roots of the perennial grasses upon which our cattle and our land depend. So, we've set aside a small portion of the ranch to keep the cattle on while we are feeding, while leaving the rest of the ranch with a healthy depth of dried grass over the dirt.

Riding horseback across our ranch and looking closely at the ground, I can understand how dessertification happens:  In the pastures we've been feeding hay all summer, the ground is powdery on top and hard underneath.  I rode through our bottomland pasture where we have left grass cover, on Saturday, before it rained and again Sunday morning, after it rained.  Before the rain, there were no green shoots to tempt my horse with a nibble.  By 11 am on Sunday, the grass in the bottomland had green shoots emerging from the tips of the old driedy runners left as cover, and we eagerly road from patch to patch to grab a few sweet bites.  Each day there is a slightly greener haze across the pastures.  In the paddocks we 'sacrificed' to keep the cows and feed hay through the summer, there is hardly any difference from before the rain, and no sign of green yet.

Texas A&M Range Scientists have speculated that it will take 2 years of normal rainfall for Texas grazing lands to recover.  From what we've seen, I believe it.  I have hopes that the practices we and other like-minded producers use will enable our property to rebound more quickly.  At least that's what I kept telling myself as I wrote out the check for the most recent load of hay trucked in from South Dakota...

Round Rock Market Saturday:  We'll be at the Round Rock Market (in the Scott and White parking lot) from 8-noon on Saturday.  This week's specials:  Save $1.00/lb on Arm Roast, Chili beef and Cutlets.  Save $3.00/lb on Boneless Ribeyes.  You may order by 5 pm on Friday, or just stop by the market to select what you want.  Our freezers are full of great beef!

Price Change Notification:  Hay prices are forcing us to raise prices, but we've decided to wait until November 1.  We wil NOT be changing the price of our CSAs (subscriptions), however.  Now is a great time to enroll, and guarantee today's prices for at least 12 months.!

We've got a busy market and delivery week this week, and a fully stocked freezer, to boot.  Now's a good time to come stock up on great beef!

Tillman Cedar Park deliveries Thursday:  We'll be making our monthly deliveries to Tillman PT on Thursday of this week, between 12:45 and 1:15.  Please have your orders in by 8 am Thursday.  

Georgetown Market this Thursday:  This Thursday is also our monthly appearance at the Georgetown market.  Word is that it will be at least a FEW degrees cooler than recent markets!  Hope to see you there.

Brazos Valley Farmer's Market this weekend:  Saturday is our Brazos Valley market day.   It's also Bruce's last market of the season, so be sure to come by and hear that New Zealand accent while you can!

Special Cut this month; Bone-in Round Steak:  We've got a new cut to try this month.  Thick-cut bone-in round steaks are great for marinating and grilling.  TIP:  cut steaks thinly across the grain and serve over rice or pasta, rather than as whole cuts on the plate.  One of my favorite round steak recipes is Yogurt-marinated round steaks.

Bid farewell to our Kiwi family member:  Bruce, (aka "G'day Mate") will be heading back to his native New Zealand September 20.  He'll be at the markets right up 'til then, so be sure to come by and wish him Safe Journey.  We'll miss his good nature and enthusiasm, but wish him well as he graduates and gets a real job :-)

The heat has broken, and (so far), we've escaped fires here at the ranch.  Now, if it would only rain!  The chickens are beginning to perk back up in the cool weather, and we're looking forward to the first eggs from our pullets to supplement the main flock's production.  We're awaiting our first calves of the season, and the cycle goes on.   

Stock up before prices go up:  As much as we hate to do so, we will be adjusting prices on our packs and individual cuts in October.  Hay prices are 2-3 times what they normally are, and it looks like it will be months before our cattle have fresh grass to graze.  We are even having to purchase municipal water, because our tanks are dry.  Now is a great time to stock up, before prices go up.  Have you been thinking about an 1/8th, half or quarter?  Or perhaps considering signing up for one of our subscription (CSA) programs?  If you do so before October 1, you can take advantage of the current pricing.

Summer Sausage back in stock:  Just in time for the September markets and deliveries, we have a fresh batch of summer sausage in.  This is a healthy alternative for school lunches, as well as a great snack!
