Time to reserve CSA packs for January delivery.  We have one CSA eighth still available, but a full complement of bi-monthly packs. Be sure to order your pack early to avoid missing out.  Please use the CSA member order page to place your order.  

Our apologies, but we are unable to pin down the January schedule until after January 8th.  In our delivery schedule section, I've listed two alternate dates for each delivery point.  I will be sending out another email once the schedule is set.  

New bi-monthly ordering options:  New this year are options when ordering your bi-monthly CSA.  You can now select whether you want your pack to come with summer sausage, beef jerky or pan sausage each time you order.

Baby Beef still available:  We have 3 eighths of baby beef still available for January delivery.  We are only selling it by 1/8ths, which weigh 24.2  pounds.  The price per eighth is $9.75/lb.  

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage.  A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with just the right pepper bite. Made locally by Westphalia Market using only our beef.    Please note-because this sausage is a test-batch, it is labelled with Westphalia Market's standard sauage label.  That label lists MSG, but there is NO MSG in our sausage.  If we decide to carry this product permanently, we will have our own labels printed.  

Jerky is back in stock:  Beef jerky is back in stock!  You can elect to receive beef jerky as your "extra" in your bi-monthly CSA and/or order extra packages via the online store.  

Summer Sausage:  The fall batch of summer sausage fell short of our expectations in terms of texture; being more bologna-like than typical.  We have received a new batch, which is back up to our standards.  The new batch will be what is included with the CSAs, if the summer sausage option is selected.  Meanwhile, the old batch is on sale for $5.00/lb off the usual price and can be purchased via the online store under Value and Specialty Cuts.  

Notice of eighth beef CSA price increase:  Effective immediately, new eighth beef CSA orders will be priced at $8.50/lb, which translates to the equivalent price of purchasing a half beef.  We only adjust CSA prices once per year, so when we had to raise our half beef prices mid-year last year, the 1/8th beef CSA was lagging behind.  Bi-monthly packs will remain unchanged at $155/pack.

December's beef deliveries start December 9. Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.  We've got several special items available this month.  Check 'em out!

New! Beef Pan Sausage:  We are beta-testing a new, all-beef pan sausage this month.  A fresh (not cured or smoked) 1-lb chub of all-purpose sausage with just the right pepper bite. Made locally by Westphalia Market using only our beef.    Please note-because this sausage is a test-batch, it is labelled with Westphalia Market's standard sauage label.  That label lists MSG, but there is NO MSG in our sausage.  If we decide to carry this product permanently, we will have our own labels printed.  

Baby Beef available in January:  We will have another baby beef available for January delivery.  At this time, we are only selling it by 1/8ths, which are expected to weigh 20-25 pounds.  The price per eighth is $9.75/lb.  The next step up from veal, "baby beef" are cattle that are harvested at about 1 year of age.  Lower in fat, high in tenderness and with a more delicate flavor than our regular beef.  Steaks and roasts will be smaller than our regular beef.  Many grass-fed beef producers sell only beef from cattle at this age. We anticipate harvesting only 1-2 baby beef per year.  You can order through a special department in our online store. Don't miss out!

Summer Sausage: Our all-beef, natural cure (no MSG, no added nitrates) summer sausage is perfect for holiday entertaining.  Or use it for a light meal or hearty snack paired with crackers and cheese.  We even dice it and put it on Pizza.  You can find it in the Value and Specialty cut section of our online store.   

Jerky:  Our beef jerky was a huge success.  So much so, we sold out before we could get the next batch sent off for processing.  We expect to have it in stock sometime in December.  We will notify our customers as soon as it is available.

Don't miss your chance to stock up at the Brazos Valley Farmer's Market this weekend.   We are having an unprecedented sale on ground beef at the Brazos Market. Ground beef will be $4.99 per pound (excludes extra lean).   

Remember that we will not be at the market in December, so now is the time to stock the freezers to get through the holidays.  You may place an order for pickup at the market Saturday, or stop by our booth and pick up what you want.   Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.

Special items in stock:  We have T-bones this month, along with all our other great steaks!  Also in stock, we have soup bones, marrow bones (i.e. doggie bones) and chuck roasts for great cold weather meals.  Finally, we have extra lean ground beef available this month! October's beef deliveries start Saturday, at the Brazos market, and go into next week.  We have one final delivery for October at Live Oak on Sunday October 26.  Orders may be placed via the online store, no later than 6 pm the day prior to the scheduled delivery.

Brazos Market this Saturday:  We're looking forward to seeing our favorite Farmer's Market customers this coming Saturday at the Brazos Market.  We are well-stocked for on-site purchases, or you can place an order via the online store.  Orders will be packed Friday afternoon and ready for Saturday, even if you don't get an invoice.

The two most common questions we get asked about our beef are "How do your beef prices compare to the grocery store" and "is your beef _____ (organic, grass-fed, natural, etc.)".  It's hard to answer those questions without an explanation of all the different words you might see on a beef label or meat case at the store.  Here's a short list, and some price comparisons.

  • Natural--legally means nothing is added to the meat after it is harvested.  HEB (and others) have optionally added the requirements to their natural label that the animals have not been administered growth hormones or antibiotics.  OUR BEEF IS NATURAL i.e. no added ingredients, no feed-through antibiotics and no growth hormones.
  • Organic--a strict USDA regulated term meaning dictating the among other things that cattle must be fed only organic feed, treated with only organic health products, etc.  Organic beef can (and most often is) finished in a feedlot.  While we use only natural fertilizers and mechanical (no chemical weed control), we do use traditional vet treatment when needed. OUR BEEF IS NOT ORGANIC, but has never been implanted with hormones, fed antibiotics and has been finished on non-chemically treated pasture.
  • Grass-fed--another USDA-regulated term.  Grass-fed beef is raised completely on grass or approved non-grain feeds.  Grassfed beef can never be confined in a feedlot.  Much of the grass-fed beef in stores (and chains like Chipotle and Elevation) is from Australia, which is currently cheaper than US sources for grass-fed.  OUR BEEF IS GRASS-RAISED AND FINISHED but not "grass-fed".  The primary difference is because some of our cattle are born and raised until weaning on pastures at the ranches of a handful of other Angus breeders.  These calves have been on pasture all their life , but we cannot guarantee that they have never had any grain.  Once cattle arrive on our property, they are fed only grass and hay.
  • Dry-aged and Aged--"Aging" refers to the time that from slaughter until cutting for sale or freezing.  Most "aged beef" available in the grocery store is "wet-aged", meaning a large hunk (like the whole rib section) is sealed in a vacuum bag and shipped unfrozen to the grocery store for cutting.  "Dry-aging" is a much more expensive and rarer procedure,  In dry aging the whole carcass, or in some cases small segments, are aged in a temperature-controlled environment, exposed to some air flow.  Dry aging produces a more intense flavor and is believed to increase tenderness more than wet-aging.  OUR BEEF IS DRY-AGED 14-21 days.
  • "Choice" and "Prime"--are USDA grades indicating the amount of marbling in the beef.  Marbling is the small flecks of fat within the muscle (especially in the loin and rib muscles) that improve juiciness and flavor of beef.  Only USDA-graded beef can be labelled Choice or Prime.  Our beef is state inspected, not US inspected, so is not graded.  However, we breed for marbling and tenderness.  Most of our cattle have had an ultrasound reading indicating they would grade Choice, and occasionally Prime.  (by the way, grading choice is rare for grass-fed beef, but something that has been a goal for our program from the beginning)
  • "Angus"--means that the animal's hide was at least 50% black and there was minimal hump (indicating Brahman breeding).  This is no guarantee that the animal has any actual angus genetics.  OUR BEEF IS FROM VERIFIABLE ANGUS genetics because we know the breeding of each animal.

So, how do we compare price-wise with the grocery store?  There is no direct answer, because Wild Type Ranch beef is Pastured, Natural, Dry-Aged, Grass-raised, Choice equivalent and LOCAL Angus beef.  In addition, it has been tested and selected for tenderness and taste-tested before we sell any steaks from each animal.  Still, here are some comparisons to meat-case beef from a local HEB this week, with the similarities and differences to our beef listed:

  • Dry-aged ribeye (feedlot, Choice, dry-aged, NOT natural, grass, Angus or local): $31.97/lb (ours $19.99/lb)

BEEF JERKY IS HERE:  Our trial batch of beef jerky is in stock and available through our online store, at the Bryan Farmer's Market or stocked at Dyer Dairy Mercantile in Georgetown.  The jerky is made from our own beef and uses an all-vegetable cure containing no MSG and nitrates only from celery juice and sea salt.  The jerky sells for $9.25 for each 3-3.5 ounce package.

Brazos Market this Saturday:  After missing August, we're looking forward to seeing our favorite Farmer's Market customers this coming Saturday at the Brazos Market.  We are well-stocked for on-site purchases, or you can place an order via the online store.  Sara (chief beef-packer and bookkeeper) is out of town this week, so orders will be packed and ready for Saturday, even if you don't get an invoice.

Last call for CSA packs for September delivery!  October inventory is also available to be reserved at this time.  Please use the CSA member order page to place your order.  We will be including a pack of our brand-new beef jerky in the September packs!  We're anxious to hear your feedback on this trial batch.

There are two eighth beef CSAs available for September delivery, at $7.66/lb.  These are large packs, weighing about 55 pounds.  Any CSA member may order them, but they must ordered by Weds, Sept 3.  After that I will make them available for bulk beef purchase by the general public.
