Clearance Sale at Brazos Market:, We will be clearing out our freezers when we're at the Brazos Valley Farmer's Market on May 31.  This will be a good time to stock up on grilling cuts for those summer cookouts.  On sale:  Chuck Roast-$6.35/lb (save $1.00); Cutlets, rump roast and stir fry beef on sale for $7.50/lb, Bone-in rib steak and NY strip steaks on sale for $12.25/lb (save $4-5/lb).

Special Cuts in Stock: By popular demand, we have T-bone steaks, ribeye cutlets, and loin K-bobs this month.  Short ribs, soup bones and tongue were in inventory as of the writing of this letter, but will not last long.  The bountiful spring grass means extra-rich fat for rendering.  We have 1 8-12 pound bag in stock for rendering.  (who remembers what french fries used to taste like before vegetable oil?)

Below is the upcoming market and delivery schedule. Please place your order via the online store, as orders emailed directly often get lost.  Especially with the warmer weather, please be sure to make your pickup point, or notify us of the need to change.  Although we'll do our best to keep your product frozen, sometimes it is many hours after the scheduled delivery before we get back to the ranch.  We are not responsible for thawing of orders that are not picked up as scheduled.

Next week, we will be delivering orders to most of our delivery points.  We have even added a BONUS delivery date for Temple next Thursday, May 22.  We have several special items in stock for the start of the summer grill season.  Please place your order via the online store, as orders emailed directly often get lost.

Time to order CSA packs for May (and June).  Our May deliveries start on May 3, so we will be packing CSAs on May 2nd.  Please place your order via the online store, no later than Friday (May 2) noon, to ensure your pack for May.

Brazos customers, please note that we have 2 Brazos market dates in May; May 3 and May 31.  When you order, please specify in the comment section which date you want your pack.  

I have listed a tentative schedule for June, which may be subject to change once my boys' summer schedule is finalized.

 Whew!  it's been a crazy start to our spring.  Aside from the usual calving and other cow-related activities, we've had more than our share of extra excitement.  A month ago, both our working Mama Blue Heelers gave birth to a total of 13 puppies!  They are just beginning the weaning process. and will be ready to find new, active lifestyle homes in a week or two.  Email us if you would like more information.  On the down side, the late March storm hit us pretty hard, turning our hay barn into a twisted pile of metal and downing several trees (and the fence underneath).  Thanks to Ralph's hard work and the hands of some neighbors, we are nearly cleaned up, and all our cattle are back home where they belong.  

We're running a little behind on the beef business, but will be ready to start our April deliveries as scheduled.  Now is the time to place your orders for any of the delivery dates between now and May 1.  Please place your orders through the online store.  

Packs:  We have Value, Variety and Grill packs in stock.  Price-saver hint--packs are now a better value than ever!

Halves, Quarters and Eighths:  One of the best ways to lower your cost is to order halves, quarters and eighths in even-numbered months, saving up to 25% over retail prices.  Halves, quarters and Eighths are available in even-number months.Bulk beef can be reserved through the end of 2014 via our online store.  Price per packaged pound is $9.25 for eighths and $9.00/lb  for quarters.  Halves are priced on a carcass hanging weight (non-cut) basis and are $5.25 per pound hanging weight, which converts to $8.00-$8.50/lb packaged weight.

Our March delivery schedule resumes this coming Saturday with the Brazos market. Next week, we'll be doing deliveries at Dyer Mercantile in Georgetown and in Temple.  We'll wrap up March with a delivery point at Live Oak Church in Cedar Park on Sunday, March 30.  Note:  I am out of town until Friday, so orders for Saturday's Brazos market placed this week may not get invoiced prior to the market.  

Remember that effective April 1, prices will increase approximately 75 cents per pound for most cuts.   Orders placed for March delivery will be at the current pricing.  Orders for April will be adjusted to the new prices, which will be updated in the online store at the end of the month.

CSAs are being packed this afternoon and tomorrow.  If you have not ordered a March CSA pack and want one, please place your order via the online store ASAP.  I will zero out the inventory online once all packed portions are claimed for the month.

As beef consumers, not producers, I expect most of you don't follow the cattle markets very closely.  If you did, you would have watched prices at the sale barn for live cattle skyrocket over the past 6 months.  The price increase is sufficiently unusual that it is even making it to mainstream media, such as Time and the Wall Street Journal.

Over the past few years, we've had to downsize our cow-calf operation due to drought and some major life events.  As a consequence, half or more of the beef we harvest is born on other ranches.  We buy Angus calves from other local purebred breeders who have similar bloodlines and production practices to our own.  Most of these friends have been supplying us with anywhere from 1 to a couple dozen calves per year since we started.  We have a mutually beneficial relationship with our production partners; they allow us to select the cream of the crop for our beef program and we historically have paid a nice premium over the sale barn price. 

With the recent high beef prices, we've all had to make some adjustments.  Sale barn prices are now 50 cents per pound live weight higher than we have ever paid to our cooperative producers, including the premium. That 50 cents translates to over $1.00 increased cost per pound of processed beef!  Fortunately our cooperating producers have been been willing to accept sale barn prices from us this spring, to help us get through this crazy period. 

But, the bottom line is still affected.  Even with belt-tightening, we have to pass on some of that increase to our final product, or we would be better off taking even our own cattle to the sale barn.  Effective for April deliveries, prices will increase approximately 75 cents per pound for most cuts.  Our March delivery schedule starts next Monday, March 10.  Orders placed for March will be at the current pricing.  Orders for April will be adjusted to the new prices, which will be updated in the online store after the March 22 Brazos Market.
